Place the quinoa into a pot of cold salted water and bring to a boil, reduce heat to a simmer and allow to cook until the quinoa bursts and their little white rings appear.
Strain the cooked quinoa and place aside.
Peel and small dice the apples and cut the green beans into small rounds, place them both aside.
Fine dice the onion and garlic and place into a pan with the flax seed oil and start to heat on high until the onions and garlic begin to sizzle and saute.
Cook the onions for about 1-2 minutes just to soften slightly then add the salt and the curry powder.
Continue to cook the onions to toast the curry powder for about a minute then add the apples, apple juice and green beans.
Finish by adding the cooked quinoa and mixing everything together so that all the ingredients are heated through.
Serve hot or cold, as a side dish or a main meal.
