Vegan Flaxseed Pudding Recipe

If you like chia puddings, then try our flaxseed pudding with some of the season's sweetest fruits. Ours was topped with local apricots and some berries.

 1 cup flaxseeds, ground
 2 cups milk alternative of your choice, we love cashew
 2 tbsp honey, maple syrup or coconut syrup
 1 pinch salt

If you like chia pudding, this one will soon be a favourite as well. Using a similar concept, combine your ground flaxseeds with your milk alternative into a bowl.

Stir in salt and sweetener.

Allow mixture to sit and thicken in the fridge for 30-60 minutes. This dish can also be left overnight in the fridge as well.

Top with any of your favourite fruits and a drizzle of maple syrup or honey. Apricots are our favourite but so are local berries from farmers markets when in season!

If you would like a smoothie instead of pudding, add an additional 2/3 cup of nut milk to thin to desired consistency.
