Slice the Chinese sausage thinly and add to a wok with the flaxseed oil.
Heat the sausage and oil over medium high heat until the sausage starts to crisp and color then add the ground pork, Korean hot sauce and fish sauce.
While the pork is cooking, thinly slice the kimchi and set aside, thinly slice the scallions and set aside and beat the eggs gently in a small bowl.
Cook the pork until it’s cooked through, then add the eggs to the wok and stir quickly to cook and separate the eggs.
Add the peas and the kimchi, mix together then add the cooked rice.
Continue to stir the fried rice to blend all the ingredients well then remove from the heat, garnish with the scallions and serve.
