Lisa Schmidt’s Old Fashioned Oatmeal Breakfast Cookies

Yields: 3 ½ dozen

  • 1 cup Alligga Flaxseed Cooking Oil
  • ¾ cup honey
  • ¾ cup packed brown sugar
  • 2 large eggs
  • 1 tsp vanilla
  • 2 cups whole-wheat flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • ½ tsp salt
  • 3 cups rolled oats
  • ½ cup chopped dried apricots
  • ½ cup dried cranberries
  • 1 cup flaked coconut (unsweetened if possible)
  • ½ cup chopped pecans or almonds

Directions:

  • Cream together the flaxseed oil, honey, brown sugar, eggs and vanilla.
  • Mix in the flour, baking powder, baking soda and salt until just mixed then add the remaining ingredients and mix until all ingredients are blended well
  • Scoop the cookie batter onto parchment paper lined cookie sheets 2” apart
  • Bake at 350°F for 6 minutes, rotate the cookies and continue to bake for another 6 minutes,
  • Cool the cookies on a wire rack and serve
